The Production Manager will be responsible for Managing all operational requirements related to manufacture of baked goods and food safety. Fully responsible and accountable for plant, materials, methods, quality, equipment, outputs and people

Duties & Responsibilities Manufacturing goals
  • Identify Mfg. Performance Measurements (preliminary)
  • Ensure manufacturing cost targets are met
  • Ensure manufacturing delivery targets are fulfilled (on time in full)
  • Ensure output quantity targets are met
  • Ensure manufacturing quality targets are delivered
  • Recommend revisions to detailed manufacturing standards, performance metrics, targets, goals and organisation structure
  • Ensure maximum baking yield
  • Ensure maximum plant and labour utilisation
Manufacturing reports (analysis and strategy)
  • Report and explain manufacturing results against target
Key Responsibilities
  • Compare manufacturing capabilities to targets with focus on optimisation and improvement
  • Identify manufacturing deficiencies and propose improvements
  • Develop and implement manufacturing improvement programme
  • Perform and report on competitive benchmarking analysis
Manufacturing reports (operations) (to be presented daily/weekly/monthly)
  • Gather and report production operation information
  • Collect labour costs, machine costs; explain trends and variances
  • Calculate, monitor and manage yield, efficiency, adherence to schedule, consumption (energy, water, fuels, etc), changeover time, asset effectiveness, waste, safety performance, shift performance; explain trends and variances
  • Perform root cause analysis and make recommendations
Manufacturing reports (operations) (to be presented daily/weekly/monthly)
  • Gather and report production operation information

Manufacturing Operations:
  • Work with Maintenance Manager in the Installation of machines/equipment; plan and execute
  • Improve Process; continuous evaluation and improvement
  • Manage and communicate breakdown impact and expedite delivery
  • Line scheduling maximising resource utilisation
Material Availability - Stores
  • Determine minimum stock levels and safety stock levels
  • Ensure stock on hand matches to stock levels
  • Ensure material availability at all times (zero stock outs)
  • Determine optimal inventory days and run accordingly
  • Ensure requisition of stock to shop floor aligns with production consumption
  • All stock accounted for, variances explained and investigated
ERP system responsibility
  • Work closely with the cost accounting department:
  • Reconcile and close production orders
  • Monitor inventory and financial transaction ensuring all inventory transaction processed
  • Ensure that all production variances are explained.
  • Update BOM when necessary to ensure accurate costings
  • Ensure all damages and scrap accounted for within the system
  • Ensure that all Production reporting is extracted direct from JDE (or via Hubble)
  • Responsible for accurate and on time data off the factory floor into JDE
General Audit Compliance
  • Responsible for ensuring the facility is audit ready at any point in time. This relates to:
  • Health and safety audit
  • Food safety audit
  • Halaal
  • Weights and measures
  • DOL audits
People Management
  • Set daily objectives for staff, ensuring full productivity and value add to the business
  • Manage staff performance weekly and give regular feedback, taking disciplinary action when necessary and giving recognition where its due.
  • Conduct formal performance reviews twice yearly with direct reports
  • Ensure regular staff communication sessions
  • Leave planning, ensuring no leave is lost
  • Participate in recruitment of new employees
  • Ensure new employees receive appropriate training
Minimum Requirements

NQF level 5/6, Diploma or Degree in Operations Management SA Chamber of Baking Certificate - preferably Theory in Bread Making 5+ years manufacturing management experience. 3+ years perishable food manufacture and FMCG. Practical knowledge of ERP system, JDE advantageous Full understanding of FSMS and OHS systems Good computer literacy, especially Excel
